ZUCCHINI CHIPS

This dish takes some time to make, but the end result is oh-so-worth-it! You won’t believe that what you’re eating is a vegetable and isn’t fried. And if you’re looking for the perfect thing to dip these into, our 4Q Tatziki recipe is just the dish!

INGREDIENTS:

  • zucchini

  • olive oil

  • salt

DIRECTIONS:

  1. Preheat oven to 225 degrees Fahrenheit.

  2. In the meantime, slice zucchini into thin rounds — about 1/8th of an inch thick. For more precise slicing, use a mandolin but be mindful not to cut yourself!

  3. Lay zucchini rounds in between two paper towels and pat down to remove excess moisture.

  4. Then, brush or spray olive oil on a baking sheet.

  5. Line up zucchini rounds on baking sheet.

  6. Brush or spray a light amount of oil on the zucchini side that is facing up.

  7. Season with salt.

  8. Bake for 2 hours or until zucchini rounds are shriveled and golden.

  9. Allow to cool.

  10. Enjoy!
