ZUCCHINI CHIPS
This dish takes some time to make, but the end result is oh-so-worth-it! You won’t believe that what you’re eating is a vegetable and isn’t fried. And if you’re looking for the perfect thing to dip these into, our 4Q Tatziki recipe is just the dish!
INGREDIENTS:
zucchini
olive oil
salt
DIRECTIONS:
Preheat oven to 225 degrees Fahrenheit.
In the meantime, slice zucchini into thin rounds — about 1/8th of an inch thick. For more precise slicing, use a mandolin but be mindful not to cut yourself!
Lay zucchini rounds in between two paper towels and pat down to remove excess moisture.
Then, brush or spray olive oil on a baking sheet.
Line up zucchini rounds on baking sheet.
Brush or spray a light amount of oil on the zucchini side that is facing up.
Season with salt.
Bake for 2 hours or until zucchini rounds are shriveled and golden.
Allow to cool.
