WATERMELON JALAPENO MARGARITA
At 4Q, we are all about margaritas - just hold the added sugar, please! So, we decided to create a fan favorite cocktail without the added sugar, the Watermelon Jalapeño Margarita! As opposed to watermelon juice, this cocktail blends up cubed watermelon to provide natural sweetness as well as some fiber. We like to make ours spicy with some jalapeño infused tequila and a chili salt rim, but if spicy isn’t your thing, just hold the jalapeño and chili spice! Salud!
INGREDIENTS: (yield: 4-6 drinks)
1 jalapeño, thinly sliced (can add more depending on spice level preference)
4-6 oz tequila
2 cups watermelon, cubed
1 medium lime, juiced
Chili spice (optional)
Salt
Ice
DIRECTIONS:
If you’re using jalapeños, muddle jalapeño using a muddler or the back of a spoon for extra spice. Combine with tequila of choice and set aside. (Optional to save some jalapeño slices as a garnish to your cocktail.)
Place watermelon and lime juice in blender. Blend until smooth.
Run a lime wedge around the rim of a glass. Fill a shallow bowl or plate with salt (and optional chili spice). Dip the rim in the salt.
Fill glass with ice, add watermelon puree and top it off with your tequila of choice. Garnish with jalapeño slices and lime wedges.
