PICKLED RED ONION
Healthy food doesn’t have to be boring. It also doesn’t have to require complicated recipes or hard work. Pickled onions are a perfect example. They take minimal effort to make and are a perfect way to elevate any simple dish that’s looking for a little burst of flavor. We love them to top our tacos (especially during a Cinco de Mayo party!), but we also love them to top a salad or layer on a sandwich for everyday eating!
INGREDIENTS:
1 large red onion
3 cups red wine vinegar
DIRECTIONS:
Cut onion into very thin half moon slices. To do this, cut onion in half (through the root — not around the circumference). Peel and place onion flat-side down. Slice around the circumference into thin slices.
Put onion slices into a large empty jar and fill the jar with red wine vinegar.
Store in fridge overnight to allow vinegar to permeate the onion.
